2018 is upon us!

FireworksHappy new year! We’re getting back into the swing of things here after a bit of a break. We had a refreshing time over the holidays with some much needed family time and a break from cooking – thanks moms/dads!

We’re stocking back up on bacon after the holiday depletion. We had many great reviews about the holiday bacon and are looking forward to a bigger year-end in 2018. Speaking of bacon, there’s a new Four All ice cream flavour featuring our bacon! We’ve got a few other bacon related cross-promotions to be announced yet.

The Baroness - Veggie BurgerMenu-wise, we’ve brought back our black bean veggie burger, the Baroness. Also back on the menu is the Julius, our take on a bacon-less chicken Caesar salad sandwich with homemade dressing.

Holiday Hours and New Menu

The Baroness - Veggie BurgerBacon orders are all in, curing and cooking this week. The first samples are tasting great!

Our winter menu sees the departure of the more warm-weathered Tom-Yum and the Feta, and heralds the return of the Baroness and the Julius. Respectively, they are a black bean and roasted vegetable burger and a chicken Caesar salad sandwich. Both items are back by popular demand, and even us non-vegetarians love this veggie burger. Winter sandwich selections can be tough to keep in season, but these ones are looking great.

We’ll be open on Saturday, December 23rd and then closed for the following week. We’ll be open again Saturday, December 30th and then re-opening on Wednesday, January 3rd.

Craftoberfest 2017

twblogoThis year’s Craftoberfest event is coming up this weekend – October 6th and 7th. Organized by Together We’re Bitter brewing co-op, the event brings an astounding local craft beer selection together under one roof for you to sample. Fantastically for us, that roof happens to be the same one we operate under – the Kitchener Market. We’ll be busy this week cutting french fries, braising brisket, roasting squash and filleting fresh trout to stock up for hungry attendees this weekend. It will be a long weekend for us in both senses of the word, but we’re super excited. Here’s what we’re offering to pair up with some of the great beer you’ll be trying -

~ Sliders – on a 2oz whole-wheat bun

Reuben – slow-braised Ontario beef brisket, dijon mustard, caraway slaw
Fish - locally farmed pan-fried trout fillet, julienne veg, house tartar
Squash - roasted butternut squash and goat cheese purée, sunflower sprouts, pickled carrot, brown butter

~ Fries – hand-cut Yukon gold from New Dundee

Homestyle – kosher salt, pickled pepper mayo
Bistro – truffle oil, shaved parm, chopped chive

Fall Superstar Menu

pulled brisket reubenWe’re bringing back some big hitters for our fall menu this year. Rotating on to the menu we have some customer favourites – the brown butter squash, the pulled brisket reuben, and the ms. piggy. We’re instituting a delivery menu which curates delivery-friendly sandwiches year-round.

Summer Menu and Quarterly Update

The TLCWe’re moving from a bi-monthly menu change to a quarterly one now. It gives us a chance to explicitly state the season on the menu as well as better rotate our menu to reflect what’s going on. We’ll be doing some feature sandwiches as smaller vegetable seasons occur before a change-point in our menu. Up and coming is a tomato and chevre sandwich as well as an old favourite featuring chorizo and corn. Stay tuned for menu change at the start of next week. We’re starting to book up for weekday and event catering, which is fantastic news. Hope your Summer plans are shaping up!

Spring Menu Change

You Feta Believe It!Time for another menu change! This one’s a quick and easy one, rotating two past sandwiches back onto the roster for the springtime. We’re looking forward to more fresh Ontario vegetables and fruits coming to the Market soon, but in the meantime, we’re bringing back two crowd favourites – the “ms. piggy” and the “you feta believe it!”

We’re happy to be supporting Lutherwood’s Steps for Kids event for the third year in a row with fresh wraps for participants and volunteers. It’s coming quickly on May 7th. February/March Menu

In addition to having busy Saturdays over the counter at the Kitchener Market, we’ve been expanding our weekday catering to offices in the region. To that effect, we’ve introduced a couple of better-travelling sandwiches to the menu this time around.

Roast BeefFirst off, the Reuben is taking a break until fall of 2017 to make room for our new roast beef sandwich – Medium-rare roasted Ontario eye of round is sliced thinly and piled between toasted rye with a crunchy cabbage slaw and a tangy horseradish mayonnaise we make in-house. We’re really happy with the results and think you’ll notice a difference in quality from your typical roast beef sandwich.

Tom Yum Chicken Salad

Our barbecue chicken sandwich was inspired by southern ingredients, and our green tomato harvest for the year. We made a bright relish from the unripe tomatoes, apples, and bell peppers – of which we have run out. Time for a change of the chicken guard! Popular demand has brought back the Tom-Yum chicken salad sandwich – inspired by the Thai soup of the same name, we make a savoury chicken salad from roasted whole chickens with lemongrass, galangal, chili, bell pepper, and celery.

Bacon Pre-orders

BaconWe’ve been making bacon non-stop since we opened as we really enjoy the process, love making a truly local pork product, and have had different iterations on a bacon sandwich for our entire life here at Breadbaron. We’ve had success with holiday bacon pre-orders around Christmas-time – we decided then, why not open up pre-orders for bacon for anytime? This way we can reduce or eliminate the times when customers show up and we don’t have enough bacon to spare for retail. Order form below, try it out!

Holiday Hours and Menu Update

We’re getting ready for a busy ramp into the holiday season this year. Some significant Saturdays over the holidays are causing us to be open for business on December 24th and December 31st. We will be taking a short break between Christmas and the New Year, closing for the week but coming in on Friday the 30th to prep up for Saturday.

Pulled BBQ ChickenOur December/January menu is up and running – we’re bringing back a staple in the Brown Butter Squash. We’re starting to feel like this one belongs on our menu every winter/spring. We do get told this when we happen to not have it on the menu! Also coming onto the menu is a Southern-style barbecue chicken sandwich garnished with fried peppers and onions and inspired by a larger than ever harvest of green tomatoes this year which feature here as a bright relish, tying it all together.

Epicater and French Fry Upgrade!

It’s been a while since we’ve found the time for a blog post on here, but we’ve got a few newsworthy items to discuss so it’s about time!

We’ve recently entered into a partnership agreement with Epicater, a small Toronto-based company that helps small restaurants link up with larger catering clients. We’re excited about the possibility of serving more lunches to clients in larger offices.

In other news, we’ve upgraded from our limited fryer set-up to a full-on industrial gas fryer. The results are great! We’ve got cleaner french-fries that cook faster, which will reduce our wait times over the counter – news we’re sure you’ll appreciate if you’re a Saturday visitor.

Moving into the holiday season, we’ll have our pre-order form up for our holiday bacon soon. If you need a reminder, that’s our usual Ontario pork belly, but cured a little differently – with warm spices and orange. We sell it vacuum-sealed. Makes a great gift!
